This week’s French Fridays with Dorie recipe is Chicken Liver Gateaux with Pickled Onions.
I decided to go rogue and catch up on a recipe I missed.
When theFFwD group made this dish it was winter in Australia and nectarines were not available.
I love scallops and was disappointed at the time I couldn’t make this dish as Dorie intended.
So, I made a mental note to myself to wait until summer…
And don’t forget the sweltering Aussie heat.
Summer is here!
So Chicken Liver Gateaux has been pushed to the back burner in favour of more seasonal cooking!
Tomatoes, corn, nectarines and basil are teamed with plump, tender, scallops…
And topped with a basil puree and lime dressing.
(It’s still school holidays here and I took my two beautiful boys grocery shopping with me.
To break up a fight, I asked them to go and grab me a two limes.
I had to laugh when I got home and unpacked the groceries…)
Each one looked at me indignantly and blamed his brother!
In the end, It all came together beautifully.
I served this with fresh, crusty, bread rolls and everyone enjoyed it.
And that’s all that matters!

mmm, plump, tender scallops. I loved the gateaux, but I could easily see skipping that in favor of this dish! It’s so beautiful!

Lovely! I missed this one too, and also chose to do a make-up today…not brave enough for chicken liver and pickled onions…not only would that dish get thrown out of the house, but I’d be thrown out too! Wishing we had some of your heat to temper our unusually cold January. You’ve inspired me for this one as a next make-up dish.

I love reading your post today. I am sitting on my couch, bundled up in a warm winter sweater and a throw blanket wrapped around me. The temps outside are hovering around zero centigrade and threatening to snow at any minute. Your post is a warm and vibrant reminder of summer, that long distant season.

Absolutely stunning photography of an amazingly delicious looking scallop salad with corn, basil and nectarines! I am envious of your terrific weather (in a really good way, of course), we have so much ice and snow here that I am really starting to look forward to warmer days.

I did survive the liver week (thanks to Nana doing the tough part) and it was not too bad, though I will not be doing this again – I am just too squeamish. Funny you did the scallops as a make up because I just ran across my photos last night of this dish…I was freeing up space on my memory card and when I came across those I was struck by how amazing they were and how much my family LOVED them. Now that was a treat for sure. Great job and thanks for sharing the sunshine photos- it is cold and grey here !

Beautiful! Summer seems so far away here. It’s an excellent idea to catch up on some summer recipes now and save the wintry ones for later.
We enjoyed the gâteaux, but there were definitely mixed reviews.

It is SO cold here especially in the evenings that I am really enjoying your summer photos. When I read your comment on my post about it being 115 though it reminded how hot it can get here and I wouldn’t have wanted to turn my oven on either. This was a great alternative and looks like the perfect summer salad. I think I missed this recipe and will have to try it.
